After years of testing and perfecting, we’ve selected four iconic recipes for you to choose from. With the guidance of professional chefs and passionate food lovers, you’ll learn to cook an authentic Peruvian meal — from market to table!
Option 1: FISH
Cooking Experience – “From Market to Table”:
For this culinary adventure, we’ll prepare two classic Peruvian dishes that showcase the vibrant flavors of the coast:
- Starter – Ceviche:
We’ll begin with Peru’s most iconic dish: Ceviche! Made with fresh fish marinated in aromatic lime juice, tender red onions, and served with sweet potatoes. You can choose to spice it up with Andean chili peppers — just like the locals do! - Main Course – Pescado a la Chorrillana:
Next, we’ll cook Pescado a la Chorrillana, a traditional coastal dish. A juicy fish fillet is gently simmered with fried onions, tomatoes, chili peppers, and bay leaf, finished in a rich fish broth. Simple, flavorful, and truly Peruvian!
Option 2: CHICKEN
Cooking Experience – “From Market to Table”:
For those who choose the chicken option, get ready to prepare two beloved Peruvian classics that are flavorful, colorful, and rich in tradition:
- Starter – Causa Limeña:
We’ll start with Causa Limeña, a light and refreshing dish made from mashed organic yellow potatoes, seasoned with lime and a touch of ají (Peruvian chili). It’s layered or filled with fresh seasonal vegetables, creating a beautifully balanced and mild appetizer. - Main Course – Ají de Pollo (Peruvian Chili Chicken):
Then, enjoy making Ají de Pollo, a creamy and comforting dish featuring shredded chicken in a rich yellow sauce made with ají amarillo (a mild, non-spicy Peruvian pepper), cheese, milk, and crunchy bread. Despite its name, it’s not spicy—just full of authentic Peruvian flavor!
Option 3: MEAT
Cooking Experience – “From Market to Table”:
For meat lovers, we offer the chance to prepare two classic Peruvian dishes packed with flavor and tradition:
- Starter – Papa Rellena:
Start with Papa Rellena — golden, crispy fried potato balls stuffed with your choice of savory meat, vegetables, or quinoa. Served hot and accompanied by the tangy, fresh Salsa Criolla. - Main Course – Lomo Saltado:
For the main dish, prepare Lomo Saltado, tender slices of beef tenderloin sautéed with onions, tomatoes, and mild ají peppers, infused with traditional spices. This hearty dish is served with fries and rice, a perfect harmony of flavors and textures.
Option 4: VEGETARIAN
Cooking Experience – “From Market to Table”:
For those who prefer vegetarian dishes, enjoy preparing traditional recipes full of fresh, local flavors:
- Starter – Solterito:
A vibrant, refreshing salad made with green peas, beans, quinoa, and drizzled with rich olive oil. A true taste of northern Peru’s countryside. - Main Course – Pimiento Relleno (Stuffed Pepper):
A colorful stuffed pepper filled with a medley of fresh vegetables and organic herbs sourced from northern Peru.
After shopping at the market, we’ll gather in our cozy kitchen where you’ll experience a fruit festival tasting and cook using authentic ceramic pots, just like our ancestors did. This technique preserves the natural flavors beautifully.
This class is perfect for those who love traditional foods and want practical, easy-to-recreate recipes at home. The relaxed and hands-on atmosphere makes learning fun and efficient—no boring delays!
